So I have seen been searching and I see plenty of posts about the strips of boneless beef short ribs. Has anyone asked if they can get these as a roast instead of strips and if so how was the result with the method you used? Thanks!
my favorite butcher cuts them from the heart of the shoulder clod in whatever size I need for the cook , usually 6-8 pounds per chunk. I smoke mine like I do brisket with nothing but salt and pepper, and take them just shy of pulling stage so the slices hold together. They make excellent burnt ends

Nice! I think I am going to give it a go. I just hope Costco has them whole. Planning on getting a bigger chunk and halving it. I'm only cooking for my parents and don't want to do an entire brisket so I figured this would be a good alternative. Ive done plenty of chuck roast so want to try something different.

We have Sam's club here instead of Costco (which I miss badly!) and the meat cutters there just give me a blank stare when I asked if they could cut them for me. I get mine at Harter House Markets, who are well known for their meats and still have an old fashioned meat counter. They are pricey here usually running $5.99, occasionally on sale at $4.99 per pound, but are well trimmed and cut to my specs.
