Smoked a couple of game hens and some pork belly. Turned out amazing. Spatchcocked the hens and injected with garlic butter. Used Shultz seasoning for rub on both hens and pork. Smoked at 265. Surprisingly, the hens still took 4.5 hours. Served with creamed curry spinach. Excellent!
 
Looks fantastic!! The color on those birds is perfect. I’ve been keeping an eye out for cornish jens on sale to do a smoker load.

This was my first time smoking cornish hens. Turned out fantastic. Will definitely do it again.
 
Looks great,I use to be able to buy the Cornish hens 22oz for $1 a piece years ago when I would go on a 3 day hunt in the mountains, those days are gone,$6-8 for a 2 pack, regular chickens a lot cheaper

Easy peasy. I start with frozen chopped spinach and about a half stick of butter. Garlic salt to taste, red curry powder to taste. Has to be red curry. I like it a little spicy, so I like a lot of the red curry. Sometimes I add cayenne powder too for more spice. Then add cream cheese. I use the Philadelphia whipped because it mixes in better, and I also add 2 or 3 tablespoons of sour cream. Voila! Delicious! Doesn't matter what order you add ingredients... I make mine in a non stick skillet.
