Hope it goes well for you.
I've read a lot about Cornell method but never tried it.
Tried a cure #1 batch of chicken this past winter. Wife liked it so looking to do it again

Love State Fair chicken, aka, Cornell chicken. I usually let it marinate for three days. The fire dept and churches have been cranking them out for a couple of weekends now. Love that smell!

It's been too long since I've done this and I happen to have some B/S thighs in the freezer. Thanks for reminding me...

Late start today, but coming along.

Baste and turn.....

10 more minutes...

What generates the aroma? I've seen a few others post about the signature aroma.
I've only done it twice , but the constant basting and flipping over the coals , dripping into the fire . Smells like a 1960's backyard BBQ . Brings the neighbors out of the house .

Looks good . I'm due for a batch . I like that cucumber and onion salad too .

Looks great but you're missing tomatoes in the cukes! :emoji_laughing:

Run Baker/Cornell a bunch and play with it a little each time. Last run I used chicken bouillon in place of some of the salt and WOAH!

@jcam222 Smell reminds me of Put In Bay chicken patio at Round House Bar.

How much (cubes, spoons) of bouillon did you use? That sounds like something I need to try....
