St. Patrick's Day has come and gone. If you like corned beef, and don't have the time to brine your own, go shopping NOW! Commercial corned beef is on sale for a fraction of the pre-St. Paddy's Day price. I picked up the last two corned brisket points my store had on display. $1.68 / lb. They had lots of corned flats and rounds left, but I prefer the points.

Commercial corned beef is pretty dang salty, but a good soak will tame it.

Happy shopping!

Our grocers are smartening up. They're not stocking as much CB as they used to. So finding leftover sales is getting harder.

Same here, I went to get one on St Patty's day morning and they were out. Good thing I had some in the freezer.

They have some here, but I'm kinda particular about what I buy.
And in my opinion all the good ones were gone!

My grocer had about 50 left in the bin yesterday afternoon. I dug through them all to find the only two brisket points. I'm not crazy about the flats, don't care for the rounds at all. The flats are good to soak, boil to shred tender, vac seal then fry up with eggs and potatoes. Hmmm, I just talked myself into going back and picking up a couple flats.

Yeah, Bear. I chuckled when I saw the price difference. Your sandwiches made me drool. I'm hoping we have a little left after leftovers tonight, cause it will be sandwich time tomorrow.

Got a question for 'ya. Does sous vide give you the fixin's for soup? After simmering mine in water for over three hours, then adding the carrots, five gold potatoes, two white sweet potatoes, a big russet baking potato, and a head of cabbage, I have an incredibly flavorful stock for making chicken noodle soup tomorrow. Just wondering.

Well, It gives you some juices that can be used but in my opinion, nothing like you're talking about.
Just like when SVing a Chucky for 30 hours, the juice we have left in the bag we use instead of just adding water to a pack of McCormick's Gravy Mix. However it's not going to make gravy the way you can with the juice left in a Crock Pot, or some other pots used for cooking. That of course is just my Opinion.

Good evening Ray,
Where are you getting those corned beefs? Raleys still wants four bucks a pound in P-ville for the flats, 3 days after St.Paddy’s. I am starting to think they are up to the same tricks Chris is talking about.

Winco on the Roseville/Rocklin border, a little too far from you. There's a Winco in Folsom on Blue Ravine, but that's still a bit of a drive for you unless you're coming down the hill.

I have a Raley's about a quarter mile from my house, but only use it as a convenience store. Every since old man Raley died, and the eldest son bought out the other two siblings, he jacked up prices. I used to spend up to $180 bucks a week there because their meat was competively priced and they had good produce. Now they're lucky if they get $50 a month from me.
