Had to do something special for Memorial Day so I broke out the Copper Pot (plus I actually had the day to tend a fire)… starting the coals on the side burner….
IMG_8999.jpeg

Seasoned up some beef ribs, Wooster, kinders caramelized onion and S&P
IMG_9003.jpeg

A couple of baby backs with the loin meat removed and cut in 3 bone sections…..seasoned up with sweet hot mustard then Jeff’s original with the base spices doubled in portion and powder butter added, oh and I sub 1/2 the sugar for sugar in the raw.
IMG_9004.jpeg

I staged them for sizes and cook time…..
IMG_9008.jpeg

Nothing but TBS…..did this cook at 250-295
IMG_9007.jpeg

Progress shot when I added some Jeff’s rubbed spam gmc2003 gmc2003 these were your fault!!!
IMG_9009.jpeg

Just more TBS
IMG_9011.jpeg

The fire…..
IMG_9031.jpeg

The CC temps….had 3 probes probe 1 left side incoming air, #2 right side just above the lower rack ( the edge of the FB), and #3 right side upper rack
IMG_9021.jpeg

Getting close….going to pump the temp to sear the bark…
IMG_9018.jpeg

Todays cook was done with local grown apricot that has been seasoning for the past 3 years in the yard….. first time with apricot….. man it burns clean and subtle….. I LIKE it!

This is a glimps of the copper pots heart!

Bingo the ribs are ready to pull, I rest these covered in the house oven @ 140….
IMG_9036.jpeg

Let the spam and beef ribs go a bit more for color…. Ready to rest now….
IMG_9043.jpeg

The wife picked up a fresh pineapple so I dropped one of the VCC grates over the coals to sear it up….
IMG_9049.jpeg

Man oh man open fire sear is a beautiful thing….
IMG_9050.jpeg

All plates up….the wife made some mac salad and some Carolina red and white sauce for the pork ribs and spam……
IMG_9051.jpeg

Man oh man, i know remember why I love the copper pot…..also a fan apricot now!!!

Thanks Jim! Oh he’s smoked spam!
Can you tell me more about this? Mainly the white sauce
Here you go!

1-1/4 cup Mayo, 1/4 cup white wine vinegar, 1/4 cup apple cider vinegar, 4 tbs brown sugar, 1 tbs plus (it usually needs more) Worcestershire, 1 tbs lemon juice, 1 tsp horseradish but I do 1 tsp of brown mustard, 1/4 tsp cayenne, 1/2 tsp old bay seasoning, 1/2 tsp granulated onion , 1/2 tsp granulated garlic, salt and pepper to taste
Great looking cook Civil!! Thank you for sharing the great pics.
