Had to do something special for Memorial Day so I broke out the Copper Pot (plus I actually had the day to tend a fire)… starting the coals on the side burner….
Seasoned up some beef ribs, Wooster, kinders caramelized onion and S&P
A couple of baby backs with the loin meat removed and cut in 3 bone sections…..seasoned up with sweet hot mustard then Jeff’s original with the base spices doubled in portion and powder butter added, oh and I sub 1/2 the sugar for sugar in the raw.
I staged them for sizes and cook time…..
Nothing but TBS…..did this cook at 250-295

The fire…..
The CC temps….had 3 probes probe 1 left side incoming air, #2 right side just above the lower rack ( the edge of the FB), and #3 right side upper rack
Getting close….going to pump the temp to sear the bark…
Todays cook was done with local grown apricot that has been seasoning for the past 3 years in the yard….. first time with apricot….. man it burns clean and subtle….. I LIKE it!

Bingo the ribs are ready to pull, I rest these covered in the house oven @ 140….
Let the spam and beef ribs go a bit more for color…. Ready to rest now….
The wife picked up a fresh pineapple so I dropped one of the VCC grates over the coals to sear it up….
Man oh man open fire sear is a beautiful thing….
All plates up….the wife made some mac salad and some Carolina red and white sauce for the pork ribs and spam……
Man oh man, i know remember why I love the copper pot…..also a fan apricot now!!!
Oh and a quite moment for all those (and their families) that have given their all so we can live free!
