Coppa, what to do with it.

I was given an untrimmed fresh Berkshire Cappicola from one of my suppliers yesterday and I don't know what to do with it.
I know I can make Coppa (air cured), but im not set up with a chamber to do such a thing or access to bungs for hanging.

Can I inject it and smoke it? Any ideas what to do with it?
 
You can smoke it like a butt for pulled or sliced pork. You can cut it in steaks (which i prefer).

I wouldn't inject it. It's not a lean cut.
 
If you want to smoke put a pan of water in smoker and smoke it low and slow to 180 degree internal temperture. It is cured so may be a bit salty
