A thing of beauty, rich and vibrant color! I did a coppa in a UMAi bag that hit 36% weight loss a few weeks ago. Got it vac-sealed in the garage fridge waiting for New Years Eve. RAY

I was already thinking Copa would be my first cured meat project....
If you want something similar, but faster, start with a bresaola (eye round). This one takes awhile...

Ooh! I think I have an eye round in the freezer!
Does it make any difference fresh or frozen? I'm about to have a freshly butchered eye round (well a whole cow, but that includes 2 eye rounds, lol)
