Hello everyone


My name is Greg Cook and my wife bought me a Brinkman dual gas/charcoal smoker grill for my birthday this past April.I have seasoned it and smoked a couple of Pork Butts on it over the summer.I am new to smoking meat but I can honestly say that everything that I have smoked so far has been excellent.Looking for some ways to modify the smoker to keep it a little tighter as far as smoke and temperture control.Seems to take alot of time and fuel to keep it at the correct temp. I have been using the lump charcoal and wood chips from the local Lowes and Home Depot.Just seems to be taking alot of it to do a good 10 to 12 hour smoke.Love this website and all the articles are very informative to a "rookie"like me.I am already addicted to cooking with smoke and look forward to many years of doing it.Just wish that I would have started a little earlier in life.Living in south Florida in Loxahatchee.So I can pretty much smoke year round.

Welcome, I just modded my smoker/grill as well. I used some aluminum flashing for the baffle and plates and expanded metal for the fire grate. The expanded metal was hard to find at HD but it's in the hardware section near the threaded rods. Took forever to find it. Check out this search, there are a lot of different ways to go about it.
