Cooking for one or two. What do you do?

My wife will eat about 10 foods and if the food has flavor or any heat then its taboo. [IMG] I cook for myself most of the time and find it hard to reduce recipes to just one serving.[IMG] Most every recipe online is for at least 4 to 6 servings. It seems that just about anything I make I have to eat over and over to get rid of it or freeze it. [IMG]Does anyone have recipes for just one or two servings or can you give me guidance in reducing recipes and cook times.

Americastestkitchen.com has some cookbooks for two people. We have several of their other cookbooks and use them a lot.
 
I have the exact same issue. I prepare many foods which can be vac sealed and frozen. I will package single serving size portions and freeze them. Works well for her favorites too and is very convenient.
 
We do the same.
A VACUUM SEALER IS YOUR BEST FRIEND!!
Our freezers are full & when vac packed & frozen stuff stays fresh for 1 year or more.

go to Wal-mart or Sams and get some 3 compartment food trays ,and make up your own TV dinners cover them with plastic wrap and freeze them, your own TV dinners are much better than any that you can buy and they are quick and easy to microwave
 
I agree with the vac seal idea. We love leftovers but only want the same thing max 2 days in a row. By vac sealing meal size portions (for us thats 2 people) we always have a variety of delicious smoked meat on hand ready for a wuick and easy meal.
