I have been asked to make lunch Saturday and Sunday this week for a shooting class for the local sheriff's dept.
It's about 20-25 people, I'm thinking Saturday 2 butts , beans and slaw. Sunday will be bottom round thin sliced , potato salad and slaw. I hope I can keep them happy, I will be out numbered. I will cook on Friday and heat back up on aite.

Go Heavy on the meat. Figure...6oz portions  X 25-30 = 150 to 180oz finished wt  X  2 for 50% loss = 300 to 360oz Raw  /  16  =  18.75 to 22.5 pounds of Butts to start for Sandwiches. Plan on 1 1/2 rolls per person since some will eat 2 sandwiches each day. If you are talking Platters base your calculation on 8oz portions since we are talking Hot, 80+*F outside this weekend and Hungry Men coming off the range.

3oz portions of Sides and 1-2oz portions, sandwiches and platter respectively, of Sauce should be enough...JJ

Another thing to have is plenty of COLD water. Nothing quenches the thirst better than water plus if they've been sweating on the range they'll be wanting to rehydrate.
 
The feed went well. Everyone was happy and armed. I made it out and home safe ,so I know they liked it. The head guy says I an now "cheif of culinary operations" . We were talking about neat slicers and how my cheapo was not up to par. He enailed me tonight and said send him a link to one I like. I did and he bought it for me. This is going to be good. I hsve 4 days of classes this week.
