Hi, I normally cook pork belly in the weber kettle, so it crackles! & yesterday did a 12 hour pulled Lamb in the WSM, so I will be using the wsm  today to cook the pork belly, some wings and 1kg of beef ribs cut into cubes!  (as I don't have to clean the wsm and the kettle on Monday)

I have never used the wsm with no water pan, so I am after cooking times & will the belly crackle?

Was thinking of a HIGH HEAT and 2 to 2half hours for all meats
