Converting from grilling to smoking

Hello everyone my name is Anthony Campbell, I am a chef from Detroit who loves to cook and create new cooking ideas and recipes. I work at one of Detroit's premiere casinos and run a catering company (savor the Flavor). Me and my employees pride ourselves in our work and it shows. I am looking to go further with smoking meats and vegetables and this is why I joined this group, I look forward to commenting and sharing my ideas and maybe recipes.
