Has anyone used a sheet pan to make a drop in convection plate?? I found an 18 x 26 inch 12 gauge aluminum sheet pan that will fit nicely in my new offset Any advice with this piece of metal?

As long as it doesn't block the air flow...  Air flow is critical to smoking food....

What smoker do you have ??  Got any pics of the inside of the cook chamber ??

I just bought the Oklahoma Joe Longhorn from Lowes. I was going to drill the series of holes and then bend the cookie sheet at an angle and bolt it over the opening from the FB then allow it to straighten out covering across the smoker leaving about 1/3 open at the other end. It made of aluminum and everyone says they used steel and I was wondering how well the aluminum will work
