Controlling Temp on Masterbuilt gas smoker

Hello

I am new to smoking and have had some good success on my first several attempts on my Masterbuilt 30" gas smoker.

However - my pit temp seems to fluctuate a lot. I have a Weber iGrill2 to monitor a pit temp, and it seems to jump around. All of a sudden the temp will climb to 350* or so and the drop and then climb. I have it turned down about as low as the smoker control knob will go. Really tough to keep any type of steady temp below 250*.

What suggestions or tips do you have on trying to keep a steady consistent temp?

One thing to note - it has been windy and especially in the northwestern part of Illinois that we live in, it's always a bit windy in our area. Could that impact a lot with my type of smoker?
 
Hi there and welcome!

I think you are on to something with the wind.

That smoker has no insulation.  There was another thread where a guy was going to wrap his smoker with some insulation to help with that.
 
Check a current thread in this forum for "smoker wind break"
I have had good luck with the mods I have made to combat the wind and low Temps.
