so I got a smoking hollow 30” digital electric smoker as a gift for Christmas. Sadly I have to keep from using wood chips until it’s windy because my apartment doesn’t want the smoke. Is there anything I can do to lightly smoke without making a huge plume? I just seasoned it today and after 15 minted there was a ton of smoke and I had to pull the chips out (only used half a cup of dry hickory chips). Any input from you masters?

Ok, a few videos later I do see how it works. One thing I wonder about is if you can use less pellets and get less smoke? Or if that’s even possible. I know during summer it won’t be much of an issue because everyone here closes windows and doors and cranks the ac or is out grilling as well.

Well I made some wings last night. rubbed them with some Jamaican seasoning I found at the store and they came out pretty good. I set the temp too low at first but after bringing it up it got up to 165 degrees and let them rest. Crispy outside, soft inside. So worth it. I did manage to use a handful of hickory for the first hour and it did give it some color for sure. Set the lower vent to barely open and there was not a bunch of visible smoke. I'll have to keep, to quote from the movie 'Mars', "Science the sh*t out of this" and figure out what works best for me.
