Hey guys just wondering what your thoughts are on this. I've only had this happen twice and it was awesome! It was the PERFECT Boston butt. Hints of pink had nice bark and beautiful WHITE and very little dark meat. Now was it because it was cooked exactly right? To the exact IT? Or was it a better quality meat because those two were actually bought from Walmart. I just don't understand. Now I've been hearing different IT. I've smoked a lot of butts and they all come out amazing. I make my own rubs and I have two sauces that I make. I have a Bradley smoker. So any thoughts on this would be great!!!! Thanks guys!
 
Cooked right or wrong wouldn't have anything to do with it being White meat or Dark meat.

I don't believe the quality of the meat would either.

I would say it just is what it is, just in appearance.
