Cole Slaw for my pulled pork and pulled roast beast

There was a Jewish deli years ago that had the most wonderful Cole slaw on the planet. Unfortunately the owner passed and her store closed. So I am experimenting with Cole slaw recipes. First question? Apple cider vinegar or Red Wine vinegar?
