Cold snowy Day making sausage

What to do on a very cold snowy day? Calling for 10-16” last i checked. Prepare for warmer days to come. Had 17 lbs of boneless pork shoulder from costco in the fridge. Also had a Leggs spicy italian seasoning packet I had added to my cart a while back to get free shipping.

Ground up using the dual grind attachment with a 4.5 plate. Split into 10 lb and 7 pound containers. Made spicy italian with the 10 and sage breakfast with the 7. I didnt realize there was no room in freezer to freeze the pork strips before grinding. Then it hit me, it is 10 degrees outside and snowing. Covered the lug up and set it outside a couple hours. Worked like a charm.

Stuffed the italian in casing I have had forever and did bulk with the breakfast.

Now time to clean up and hit some golf balls.

Looks very productive... don't hit the golf balls into the snow.. you won't find them for awhile LOL !
 
Nice work for sure, looks great. One thing I do on my links to vacuum seal is to par freeze the links before bagging and vacuum seal. This way they don’t get mashed by the vacuum and stay round.
 
Havent lost a ball yet. I dont swing hard enough to hit it through the screen.

Par freezing is a good idea and have done it in the past. I just watched it set on gentle and hit seal before got too smashed. Just didnt want to wait around today.
