I have a fishing buddy who has a Cookshack. He is tired of tasting my yummy cold smoked fish, etc and wants to do his own. Doesn't seem to know much about if Cookshack has a cold smoking attachment, etc. I see an item on Cookshack's website called a "cold smoke baffle". Does anyone have one of these and can tell me how it works? Their website doesn't provide a bunch of info on this.

I don't have a Cookshack, but my understanding is you freeze the baffle. When inserted, the baffle cools the rising smoke and provides a Cold barrier between the heat source and the fish. Guys, with other smokers, have lined shelves with soda bottles of Frozen Water to accomplish a similar result. Set the Cookshack at its lowest temp. I suggest your buddy run a test to see how low a temp can be achieved. Maybe the Baffle AND Frozen Bottles of water are needed...JJ

Link to baffle instructions.
Also do a search for "cookshack cold smoke baffle ". Several videos should turn up.
Hope this helps.

Some folks will also place a tray of ice on the baffle. Plenty of videos on cold smoking show using an amps or similar device. Here is a video showing two competing units that you physically attach to the smoker. Pretty informative. This is the way I would go if I was interested in cold smoking.

Thanks guys for the links and info. Maybe I'll make a trip over to my friend's house to show him this thread and to check out his Cookshack.
