Cold smoked pork chops

Cold weather that is. I bought a wifi controller for my camp chef pellet smoker. -2 when the cook was done this evening, it's colder now. Can't even go out to take a leak. Now the poor pics. Sorry

This did not suck. Very juicy and flavorful.
 
I did some bone in chops tonight. Was -6 when I started and -11 by the time I was finished. Yours look much better than mine, hence no pictures!

Thanks and I didn't brine. I never brine. Maybe I should try it
Not sure how much salt you like, but I use 1Tbs of granulated salt to 1qt of of water to brine pork and chicken pieces. It doesn’t seem like much but it’s enough to taste a difference in the meat and elevate juiciness but at the same time low enough salt to allow for your favorite rub or seasoning without going to salty.

I might try it but I don't really see the need to brine these. Maybe chicken.

THAT'S ONE FINE LOOKING COOK ADAM, NICE WORK! I COULD NEVER BE IN THAT KIND OF WEATHER AGAIN, SURGICALLY REPLACED HIPS AND SHOULDERS. ONE SLIP ON ICE MIGHT AS WELL BE DEAD.

Nice cook on those . That small " tail " rib / dark meat section is the best .

I generally don't brine chops either , unless they're 2 " thick .

Those look great Adam!! Love some grilled or smoked chops around here. Where did you get that BBQ sauce? Straight from PS? I'd like to try that for sure...
