Hey fellow bbq afficionados, its been quite a spell since i have posted anything. Came to Mexico to visit family and decided to make dinner for

them while they were at work. Didn't find any pork shoulder over here but i did find these huge ribs with the belly still attached. Gonna have to take a couple racks back home.

Marinated the meat overnight and threw it into my old offset i gave them a while back ( I miss this smoker). Smoked it at around 275-300 for 3 hours using mesquite lump charcoal and apple chunks. Then i threw it all in a pan with its own drippings and the remainder of the marinade, covered with banana leaves and cranked up the heat to
375-400 and cooked like that for another 2hrs. Shredded all the meat and made some classic tacos yucatecos with pickled onion and habaneros. Everyone was real happy and so was i because ive never made this before i was afraid it wasnt gonna be good. Anyway hope you all had a great weekend.

This is a great dish, I've made it many times and finally settled on a recipe that best suites my tastes.

Thank you, i was actually checking out your thread when i made my post because it came up. Looked really tasty! Can't wait to make quesatacos fried in the grease drippings for breakfast.
