The ratio of kosher salt per pound of meat is 10 grams per pound, so what is the ratio per pound for coarse black pepper ?
 
Well a lot depends on how much pepper you like, but average is 2-3 grams per kg.
Edited, I had posted per pound but that measurement is for 1 Kg.
For a pound I'd try 1-1.5 gm per pound

Looking through my personal recipes it seems I use anywhere from 1/2 tsp per # to 1 tsp per # of meat. For a fairly mild sausage like bratwurst I use 1/2 tsp per #, for a spicy sausage like kielbasa it can be as much as 1 1/4 tsp per # of meat.

And again as someone mentioned earlier it just depends on how much pepper you like.

Exactly. Charts are based on someone else's idea of what tastes good.

Use a spice chart as a guideline only. you are the judge of what you prefer.
