I clean my racks, Drip Pan, & even my wood pan after every smoke (I smoke at least once a week usually on Sat or Sun)...

I was just curious on how often i should clean (& re-season) the inside walls... is there a certain period of time?

Should I be doing it after every so many smokes?

Any sugestions on what to clean the interior w/?

Umm, no-you should just stick to cleaning the grates, the drip pan (I line mine with aluminum foil) and empty out the wood pan.

When I use the Lang, after I brush down the grates and build the heat back up to about 350°, I hit the cooking chamber with the water hose and let the steam take care of the walls.

I'll do the same thing twice a year with the GOSM.

I will give my interior a Good Steam Cleaning this weekend!
 
Unless I start to get a build up on the bottom of the GOSM I don't bother with the inside of the smoker itself. Sometimes I will just scrape out the bottom and spray it down with some Pam and other times I will pressure wash the whole inside and reason the whole thing it just depends on how much build up is in the bottom and my mood. My Lang gets a steam cleaning before almost every smoke depending on what I smoked last and how long ago
 
Good advise from an experienced smoker. Maintenance is not at a high level, which leaves more time for smoking.
 
I have a question along these lines of cleaning... I seem to have a good buildup of creosote on the bottom of my water pan. It is fairly hard like tar. Is there a good way to remove that, or should I even worry about it?
 
I know some people (after removing what they can) throw them in the oven (set to clean) and burns it off... I empty and clean mine after each smoke so im not 100% on that
 
But don't do what I just did !
I had my pan lined with foil. I had Apple Juice in the pan. I didn't notice the Apple juice ran dry, and there was a leak in the foil. The foil was "GLUED" to the pan! It did however come off relatively easy with very hot water, and a little scrubbing.
