These are a staple in our house and always hit the spot. Hit the chuckie with some Holy Cow and we were off. A few hours later wrapped and finished it off for dinner. It finished a bit earlier so I tossed the shredded meat in a crock pot to warm up. Served it up with some guacamole, salsa, and a yogurt lime cilantro dressing.

Tomorrow these will make some good nachos.

Looks good from here! I bet that dressing is delicious. Gonna be some good nachos tomorrow!
 
I'm with you on making hardshell and softshell tacos, but I like them in flour tortilla smothered burritos too. And pizza topping. You also have the ammunition for any of the Machaca varieties., Google search it as there are a lot of varieties. I like it in scrambled eggs, stirps of corn tortillas that have been warmed and some cheese. and sauteed onions. the same mix can go into a breakfast burrito.
