Wife wanted to have a few people over for a bbq today so she said she wanted bbq chicken and I said well I’ll throw a Chuck roast on the smoker to go with it and then she tells me she wants people over and food ready at 1 So early day for me. Chuck on the grill at 4 and I still haven’t decided how I want to finish it today. But I’ll post up with pictures when done.

That's a great looking hunk of beef . Nice start too .
still haven’t decided how I want to finish it
I've had the chuck decide that for me . Sometimes they shred , sometimes they don't .
I'll be watching , looks great so far .

This ^^^
Sliced looks more formal for a dinner party. But if it kinda falls apart when you try to slice, then just shred it. You can also add a little bit of juice back in after shredding, whereas with slices you may need a sauce.

Well she said most everybody’s expecting chicken and do what I want so this may not turn out but I decided to try a little of both putting some on for shredded and I wanted some bites just for me as I bbq the chicken.
Pulled at 163 now split and back on in pans with foil.

dr rat,
Looks very yummy indeed. After you cubed up, did you mop the cubes and then put back in foil and back into the smoker? And was this Costco prime beef?
Again very nice work.

Yes I mixed up some barbecue sauce added a little honey, brown sugar and a little bit of rub and mixed it in a bowl then put it in a Ziploc bag added all the chunks coated all the chunks and put them in a aluminum pan with foil over top for about another hour and then put them back on for another hour or so uncovered to finish them off.
Yes that was Costco prime beef.
I was at Sam’s club today and I’m
