Haven't had time to run the smoker in a while and as luck would have it I've got today off so Christmas Eve ribs and fresh collard greens it is!



Went with 50/50 hickory and cherry. Smells really good out here!

2 hours in and into the foil. My wife loves fall off the bone tender.


Hope everyone has a merry Christmas! Doesn't feel too much like it here. Hot and windy. Looks a lot more like a tropical storm in the summer!
 
2 hours in the foil and these things are falling apart! 2-2-1 seems like too long. Any thoughts? I've been averaging 235 degrees.

 
It's done when it's done;). Stash them wrapped in towels in a cooler if needed. They are looking tasty hopefully we can see more pics later!!
 
b-one is right, I have seen two pieces of meat, same size, same weight, and one ends up done 20 min before the other, meat will do that, 3-2-1 and 2-2-1 are just guidelines, good guidelines and ones to follow, but the meat is done when it says it is done. great job
