I used a 14" chefs knife. It is all about technique when chopping. I learned from watching the guys behind the counter at Bodacious BBQ in Texas off I-20....

Bodacious just takes slices of brisket, with a little bit of the fat, and chops it up basically like he did in the video. They don't start with a big chunk of brisket.

I'll also throw this out there....in East Texas, shoulder clod was the go to cut for chopped beef....so if you can get a shoulder clod, that would be the way to go to feed a crowd.

Made chopped beef tacos for lunch today....

little sriracha, queso Fresca crumble cheese, diced red onion, and cilantro on a toasted tortilla....yum! I ate 4! LOL!
