Chili Lime Wings

Here’s what I seasoned the wings with.

1 Tbs Chili Powder
1 Tbs Cayenne Pepper
1 Tsp Kosher Salt
1/2 Tsp Smoked Paprika
1 Tsp Onion Powder
1 Tsp Garlic Powder

I put them on the warming rack of the Weber grill at around 300 degrees for an hour, turning half way.
While that was cooking I made a sauce using
2 Tbs Honey
Zest from 1/2 Lime
Juice from 1/2 Lime
1 Tbs fresh chopped Cilantro

After wings were cooked I cranked up the heat to around 400 degrees and tossed the wings in a large bowl with the sauce. The wings were cooked a few minutes on each side. Because the sauce was pretty thin I repeated this three times. I topped it with more cilantro and served with lime wedges.

I was pretty pleased with how they turned out. The flavors were quite good. The only thing I will change is next time I’ll reduce the sauce by half to make it thicker.

then someone posted in thread and saw those amazing looking wings. Nice finish!

Chili lime is one of my favorite flavors! I do the wings in chilli lime too..a little different but same concept. BIG BIG like from me!

Some nice looking wings ya got there buckeye. When I originally looked at your post and saw “ I seasoned wi” I was confused. Glad it all came together for you.

I think your just about spot on to your seasoning. Maybe add some lime zest, your going to be using limes anyway....might as well use it all. I like to marinade . Try throwing your seasoning with the added lime zest on then put in a bag with a splash of oil and some lime juice. Let that set for a few hours and then go ahead and throw on the smoker.The other thing different i do is just toss them in the sauce after they are cooked. Just like you would a hot wing in buffalo sauce after frying.
Here is my sauce recipe....

3/4 cup green chalula sauce
1/2 cup butter
2Tbls lime juice
1/4 tsp BADIA chilli lime seasoning
Heat and blend together.

If you cant find a chilli lime seasoning like BADIA just use the seasoning you came up with with the added lime zest.

If you give this a try let me know. I wouldnt mind some feed back from it.

I did toss the wings after cooking.

I also forgot .... I use the cilantro too...just as a garnish. I dont see anything wrong with using the honey also. I may give that a shot next time on mine.
