In Jeff's recipe he said to poke holes in the muffin pan but his picture shows a metal pan like mine. So I'm confused on what to do?

I read it as a rectanglular muffin pan with eight spots (holes as he wrote) for eight pieces of chicken is best. Looks tasty.
