I recently did Pheasant sausage which was fantastic, but i just used a premixed spice mix. This sounds very interesting. How's it tasting?

I like the chicken pineapple sausage. 

I've learned one thing about making it......................................DON'T SMOKE IT!!!

I made a batch for fresh sausage and it was great.

I also made a batch with cure and hung in the smoker, and it was awful!!!

Nice looking sausage you have there, I too am curious about the pineapple sausage, I tried Poli's recipe and it was horrible, even the cats turned their noses up at it.
