My wife and I were perusing some cooking videos on Youtube yesterday and came across one featuring chicken and waffles. I've been aware of this dish for a few years, but never really looked into it. So we watched several videos and both were left kinda scratching our heads.

What exactly is the point of this supposedly beloved dish?

I've seen references to it being a Southern thing, a California thing, a Baltimore thing, a soul food thing, but I haven't been able to really pin down it's origin.

Don't get me wrong, I'm a huge fan of good fried chicken, as well as a huge fan of waffles. But....I can't get my head around why anyone thought of this in the first place, and why it seems to have gained such popularity among the internet food people.

We watched probably ten videos and read a few articles, and just about all of them featured a piece of fried chicken plunked down on a waffle. Some had syrup on both, most just had syrup on the waffle. One featured maple syrup with siracha in it, which seemed kinda interesting, but it was still just a piece of chicken plopped on a waffle. And all of them used bone in chicken.

What am I missing?
 
I like some recipes Bobby Flay does for brunch. Waffles and chicken with a little southwestern flare

One of the shows I watched said it originated in Harlem. I had it one but just at a chain restaurant and was only ok. I think the big appeal for most people is the sweet and savory contrast.
