Cherries in snack sticks

Thinking about adding some dried cherries in my upcoming batch of snack sticks. Has anyone done this? how did it taste?

Going to be doing a traditional and chedder jalapeno sticks

A chedder jalapeno with dried cherries intrigues me. Too much going on?

New to the forum and sausage making but excited to get started. Thanks for any input.
