Cheddar snack sticks

Doing another batch of cheddar hot sticks today. Today I used the racks instead Of hanging because the last time I made a batch one of my wooden dowels broke and I lost about 3 pounds of sausage to my heating element. Well after a few hours of smoke at 160 I checked on them and bottom rack on the right look nearly done middle rack on the right half that and on top rack just a little color on the right. So I rotated my racks accordingly. Seems weird cause I didn't have this issue when I hung them. I have an I phone is there a good way to post pics on here with my phone. Anyone else have this hot side issue

On the phone pics issue - sent the pics to your email and save them to your desktop and load them directly from your PC - there is a scene picture button just to the left of the filmstrip - click on that and follow directions from there

Are you using a pre mix seasoning or your own? Can't wait to see some pics.

I use conyaegers hot stick mix then add garlic, onion, high temp cheddar, and some dried habeneros and cayane. They really are amazing.
