So I totally forgot to come back and fill you all in. I ended up running my Louisiana Grills 7 series at the smoke setting (temp kept around 180) for about 5 hours to make jerky. There was plenty of TBS and I think the overall flavor of the jerky was better than from the normal pellets. I like the charcoal pellets and will buy more of them. I did not notice an increase in fuel consumption.
