Might be a dumb question, but has anyone tried this? Would it be worth the effort and actually change the taste?

A couple of pieces would be OK, but you need to be careful, because if you use too much, you will end up with a big fire in the chip tray.

If you are looking to change the taste try different wood chips. Or a mix of wood chips like oak + cherry.
