Hahaa! I KNEW that was gonna be Indaswamp's recipe, as soon as he listed the season sausages! Yaaaaas!

At one point I went through and read all of Indaswamp salami posts, looking for his favorites to make. And that one has always been a surprisingly odd yet interesting flavor!
I like that Eric included some recipes from some of the outstanding sausagemakers here! Love the Celebrate sausage ;)
 
My hands down favorite Italian salami is the Calabrian... Man, when it is made right, with a small pH drop just under 5.3, and using the natural sugars present in the pepper powders for fermentation....WOW! so good!!

But the Pistachio and Lemon is damn good too....top 5 for sure!
 
That Garlic Shrimp & Broccoli Sausage looks like something I would want to make but not crazy about Broccoli. Wonder if you can replace with something else or just leave it out?
 
The Austrian farmers sausage looks like something I want to try. That and the South African griller.

I love greens but not kale. I might give it a go with the Broccoli.
Why not just leave it out? I'm not really sure what it adds outside of green stuff that sticks in your teeth.

I dunno about that. I use kale when I make zuppa for the lady and I will taste it to make sure seasonings are right but that's about the only way I can get that stuff down. If it's zuppa I'm going to eat, I sub in spinach ;)

Just watched the Butiffara Dulce. WOW!!! I doing my Texas Hot Links tomorrow and that Butiffara Dulce made the top of my list. That hits my favorite flavors.
 
I watched the Taylor Ham/Pork Roll episode. Loved it up to the point where he put the ketchup on the sandwich!

Sacrilege! Just kidding!

Might try the recipe.

I've made

South African cheese griller (my favorite sausage ever)

Pot sticker sausage (yum)

Green onion Cajun sausage (kinda like a spice, chop it up and throw it in something else) good in a bun too

Rotisserie chicken sausage really good, never knew I needed it in my life. (Made this one and the South African cheese griller multiple times)

Can't go wrong (so far)
