I have searched the forums and found what caulk to use. My question is can I caulk the inside of the smoker? I was worried about toxins but I figured if I got a high heat that it should be fine?

No problem, I caulked mine and no effects.  Just wipe off excess good.  Definitely helps seal up the box.
 
Definately use the high heat, with a thin coat.  Make sure your surface is very clean. I had a few little gaps in an old smoker I had and it sure solved my problem.

Other than that you should be in good shape.

I used a high heat, food grade silicone that I bought on ebay. Seems to work quite well.
 
I didnt seal my smokehouse because you need it to breath. However use high heat food grade.

Your smokehouse should not exceed 180* anyways.
