Cast Iron Mushroom Chicken Bake

So since we really liked the Italian bake we did in the cast iron skillets we decided to try something different.

Sue got the recipe off of Campbell's website here that we used as a starting point. We did do some slight modifications.

Browned up the breasts:

Then into the skillets with some fresh browned shrooms and carmelized onions (one of the mods)

Then the rest of the ingredients were combined and added to the top:

Then onto the grill indirect at 350 degrees:

35 minutes later:

After resting for 10 minutes:

Then plated up with mashed potatoes and broccoli ready to go:

My kind of meal right the John ! Good call on adding the carmilized onions. I could put carmilized onions and mushrooms on top of just about anything! Like!
 
Damn John that looks great man! I really like all the flavors and ingredients you added in there. You are pumping out some good looking CI stuff man. Big points my friend!

Beautiful John, just beautiful, and perfectly executed. I'm with Travis: this is my kind of meal. I'd be all over a couple pans of that stuff. Keep the CI stuff going!! I'm likely to get back to it shortly but still running the gamut with the griddle. We do love the way CI food comes out though...and it doesn't get any better than what you've been doing.

Boy howdy John, that looks to be some real tasty comfort food right there, Like! It not only looks scrumptious but appears to be kind of healthy too, nice piece of work! RAY

There is one in northern AZ (Mangum Fire - 30K acres 3% contained) not affecting us here, then there is one South of us in Northern Tucson ( 15k acres 15% contained) and not a worry for us but is for folks in Tucson.

sawhorseray sawhorseray - Keep an eye on the Bush Fire as it was human caused on saturday and is already at 64k acres and 0% contained and is just north of scottsdale. Think Fort McDowell casino....they have closed ST RT 87 from scottsdale to payson. And high winds today and tomorrow are not gonna help the firefighters.

There have and there are still quite a few other fires but they are contained or mostly contained.

Thanks for the like Travis, and my wife and I love onions, but we have to carmelize them now or they give us really bad indigestion.

Thanks John! We have some family who have a place up in Payson and decided not to leave last night and come back to Mesa. Now they are kind of stuck there and waiting to see what happens. 87 is closed down and they didn't want to drive the little country road in the dark to go thru Flagstaff. To compound things if they have to evacuate to a shelter there's coronavirus to worry about. I've never lived anywhere I'd have to worry about burning to death in a wildfire, and never will. RAY
