Not sure if this will help in loading your meat into the jerky gun, But when I load ground meat in my Dakotah stuffer, I put a couple large spoon fulls in, then I use a round wooden dowel and i poke the dowel up and down in the meat which opens and releases air pockets and kinda settles the meat into the bottom of the stuff.
I very rarely have any air problems as I stuff my snack stix. I have used the same procedure with my Jerky cannon as well with great results too.
Morn'n All.......I bought the Cannon last fall. Filling the thing was a PIA until I tried an ice cream scoop that is just a hair smaller than the tube. Scoop the meat......flip the lever...meat falls to the bottom of the tube. Then I use a 1 1/4" PVC cap on a short piece of 1 1/4 PVC pipe as a plunger to pack the meat down. This way small batches of stix or ground jerky is a snap.
My son took a liking to the ground jerky, and learned the girls at school did to.
Already burned up the cheapie shooter and just went and bought a LEM.
