First go at making Carolina Twinkies. Jalepenos stuffed with Pimento cheese, wrapped in sausage and bacon. Seasoned with a good rub. Oh my were they good!

Those look killer! Never heard the term Carolina twinkie, but I do pimento stuffed with the bacon frequently. Gotta try the sausage. What kind of sausage?

Edit: So Iooked them up, and apparently they allege to be invented in Edenton, which I'm about an hour north of. Huh...
 
Finally got around to making poppers last weekend and LOVED them!
Now gotta try with pimento cheese!

Thanks! I didn't have any fresh on hand, so I just used a tube of mild breakfast sausage. I've done stuffed Jalepenos in the past, but the sausage took these to another level.
