I'm from up north in Saskatchewan Canada.  Just started hunting again.  My son is now old enough and we hunt mostly birds now, pheasant, grouse, partridge, duck, geese etc.

On a whim I bought a little chief smoker.  Well I fired it up and tried once a month ago.  Smoked some meat and finished it on the grill.  It was terrible, it was beyond terrible it was horrible!  It tasted like fireplace.  It was so bad I boxed up the smoker I thought I'd never try it again.  I'm guessing lesson one is a lil smoke goes a long ways?

Anyway, I think jerky will be next.  I need to get this figured out, I don't want my game meat tasting bad.  So far this site seems to be the place to be!
