I was reading in one of Jeffs Smoked turkey recipes that he prefers a dry brine. The recipe for a smoked Maple Barbeque Turkey has the recipe for a wet brine. Can you dry brine the turkey by mixing the kosher salt, maple syrup and Jeffs rub together then covering the turkey in the mixture overnight or do you need to stick with the wet brine mixture.

Yes...Start on Tuesday. Rub with a mix of Salt, Rub and some Maple Syrup. On Wednesday, rinse, dry and place uncovered in the refer overnight to dry the skin. Thursday apply more Maple Syrup and Rub and follow the instructions for smoking as described by Jeff...JJ
