can a salt free sausage be made?

my neighbor just got put on a salt free diet.  I thought about making him some fresh sausage but didn't know if it would be a problem making the sausage without adding the salt.  It will not be smoked.  Probably grind, season, regrind and put into patties.  my thought was to make a breakfast sausage.  does excluding the salt do anything to the freezer storage time?

Steve, morning.....  Removing the salt, will not have an adverse effect of freezing...  Do you have a line-up of spices to add for flavor ??

Several members are on low salt diets and may have some recipes that will help the flavor.....   Dave

I have been using the sausage book "Great Sausage Recipes and Meat Curing" by Kutas.  I've really enjoyed his breakfast sausage recipe and need to make some more.  it seems to go quickly  lol
 
The short answer is No, the long answer is Noooooo! :biggrin:

By salt free I assume you mean zero salt???
You can mix meat and spices together and call it whatever you want, but to make real sausage, salt is required.
Salt is what extracts proteins from meat, it's those proteins that bind the sausage together and give good sausage its characteristic texture and flavor.

IMHO, of course.

Steve, I know what you mean....  Home made breakfast sausage is so much better than store bought...  I don't understand how they can ruin a perfectly good pile of ground up pork....LOL..  Dave
