I did 2 butts and normally wrap in foil. I figured it's just for the wife and I so I tried one in butcher paper. Think I wont foil anymore. Much better bark and it only took a few hrs more to cook

Butcher paper is the ticket for great bark. I actually put 2layers of foil on the bottom of my brisket or pork butt, then the top I use butcher paper. Wrap the foil with the paper and you get the best of both.
