Yesterday I skinned some Salmon filets to make more Salmon nuggets. Typically I just toss the skins away or give to my neighbor who
cooks them for her dog as a treat. This time decided to marinade them in a olive oil, soy sauce & misc seasonings mix for a couple hours. Then onto the grill. I had the pieces spend more time skin side down in order to get it real crispy.
So good, even the wife couldn't say no. Very crunchy. Very perfect for snacks during our upcoming trek up into Oregon to the Southern Oregon Smoked Salmon Festival which happens this coming Saturday.
