burning in my new MES 30

At this moment I'm seasoning my new MES 30. The temp gage on the smoker reads 275 deg F while a digital probe right next to the smokers sensor reads 305 deg F. If this happens when Iam cooking  which thermometer should I rely on? The sensor is on the left rear wall 2/3 of the way up.

Have you checked the accuracy of your digital probe? If so I would go by that. I have read a lot of MES temp sensors are not accurate.
 
Then you need to trust the digital probe - Alesia's (SmokinHusker) is off by something like 30* if I remember correctly 
 
That's good then. A smoker that tops out a 300 instead of 275 is more useful. I will make a conversion chart of sorts, different temps and their respective readings. I can live with that.
 
My MES reads 15-20 cooler than actual temp, so I have to set the temp lower by that number to achieve the desired cooking temp.  I luv my Maverick, dual probes and wireless monitoring is awesome.
 
I have 3 MES 40's, and each one reads different

The one I use the most, reads 211° on the controller, and 225° on the middle rack

An external thermo like them Maverick ET-732 is a valuable piece of equipment

Check each rack for temp, and note any differences.  Some racks will run hotter than others.
