For the guys that have built fridge smokers. What is everyone's thought on breaking them in? What was your process? Mine is propane with a side mount smoke generator (not installed yet).
 
It's enamel inside. I got it up to 350 degrees for several hours before putting food in it. I'm switching from propane to electric. I could never maintain good temps using propane.
