Building my own smoker.

My objective is to build a smaller version of the oak smokers that professional southern BBQers use for their restaurants. Two of the best BBQ places here in Orlando use oak. Huge stacks of wood can be seen in back of the restaurants.

The reason I'm doing this instead of buying one of the quality smokers retail is that I like to build things myself.

Any advice would be appreciated.
 
PredFan, Check out the Builder forums here at SMF, our members have lots of great ingenuity when it comes to building smokers.

The only restaurant style commercial smoker that comes to mind is Southern Pride that are usually gas fired using natural gas or propane with the addition of a wood burning firebox to get that smokey goodness into the meat. The do have an electric model in which the smoke is produced from wood chips.
