I am in the process of gathering material for my first smoker built on a trailer. I have landed a decent trailer and any size propane tank I want. I am considering 250 maybe the 500 gallon size. I am planning on adding fire box on lower end of the tank toward rear of trailer and piping the trailer for propane at the fire box to ensure easy start up of fire wood charcoal etc. I am also planning on incorporating at least two propane burners not sure on specs but big enough to handle large pots if need. Also, plenty of storage. I have a few drawings laid out and will post photos of them soon.
I am open to any advice. What size is best, how big of fire box, should I insulate fire box, is reverse flow better or should I just add tuning plates, what material if any to seal doors off, what hardware for latches for the doors, how many racks and how far apart.
Also, I am tossing the idea of adding a 50 gallon tank at the front end of the smoker vertically just to add a place to keep things warm while cooking. Please offer opinions on this option as well.
