Broken slicer

Was making some jerky today using @Quiganomics sweet bourbon recipe slightly modified. Went to turn it on and switch broke. Ugh. Initial tasting of marinade is a thumbs up. Ended up cutting it by hand. Was thinking about a bigger slicer recently. It is a blakeslee 8.7” old, that plastic parts brittle old. Anyone ever replace the switch before?

I started looking on FB marketplace, or my better half did since I dont have a login. Found a used bizerba gsp hd33 slicer 13” slicer abt 2 hrs away for $500. It is missing the sharpener and meat anchor so will be another $200. Anyone know anything about these. Sounds like a good deal from the little research I have done. I also have a belly for habanero bacon be ready to smoke in cpl days so trying to avoid borrowing from a friend of my neighbors.

Unless you know a pro who can sharpen it, before you buy it check if a new blade is available/cost.

I have a hobart from the forties WITH the sharpener--the sharpener is worth more than the whole (in 100% working order) slicer

Blades are available. It is a newer model from what I can ascertain. I would buy the missing sharpener. It is a common commercial slicer.

I’d get it! I don’t have any experience, but they look good quality, and the cheapest used one I found on eBay was a 2018 for over $1900!

I'd buy it in a heartbeat! Bid on a 12" Bizerba a couple years ago... ended up one bid at $600 was enough to own it. Didn't need it as I have a 10" Lem only three years old. But doing research on it I believe it's over $3,000 brand new. And I love mine!

Bizerba is a very high quality commercial slicer. Buy once cry once.

Buy it, that's a steal if it's in working condition.
A lot of the deli's out here use them.
I'm sure you would have no problem finding someone to sharpen the blade for you, be it a local deli, a chef store, or a professional sharpening company, either local or online.

Post pictures when you get it.

I wish I had the room to keep one set up. Some day hopefully!!!

Good point @forktender about the space. Wife wouldnt let me keep the chamber vac sealer on the counter. Checked in with the wife so she understood the size of this thing. Nope, cant stay on counter but ok with a cart. Which is nice so can just wheel it around when needed. I have the space so can keep in a corner by the utility closet which has the vac sealer inside on a cart. Glad I built my man cave above the garage so have room for toys. All my cabinets are filled with meat processing equipment. Big closet under stairs to man cave filled with brewing stuff that hardly gets used these days since I started down the meat processing path. Dont drink much beer anymore so dont make it. Bourbon is king these days.

The cart is definitely the way to go! Those things are heavy! Mine sits on a cart so can wheel it in the kitchen when needed.
